S'mores Brownie

This S’mores Brownie recipe is a delightful combination of rich fudgey brownie, toasted marshmallow and biscuit crumb.

Ingredients
- 220g butter
- 200g caster sugar
- 175g dark brown sugar
- 25g flavour shot
- pinch salt
- 120g cocoa powder
- 100g plain flour
- 3 eggs
- 5 crushed digestive biscuits
- 70g dark Melt & Pour
- 250g marshmallows
Method
Preheat oven to 160c fan.
- In a microwave safe mixing bowl, add the butter, sugars and flavour shot.
- Microwave in short bursts, storing at every increment, until the butter is completely melted, then heat for another 30 seconds.
- Set the butter/sugar mixture to the side to cool for 5 minutes.
- Once cooled, sieve in the flour and cocoa powder and mix until just combined.
- Now add the eggs and mix again until well combined.
- Pour the brownie batter into a lined 9×9 inch brownie tin, and bake for 20-25 minutes. The brownie should still have a slight wobble to the centre.
- Allow the brownie to cool inside the tin.
- Once your brownie is relatively cool, put the marshmallows in a microwave safe bowl and heat in short bursts until melted.
- Pour the melted marshmallow on top of the brownie and quickly spread evenly. At this stage I use a cooks torch to toast the marshmallow layer. This is optional, I just think it adds a little more flavour.
- Now you can sprinkle the crushed biscuits over the marshmallow.
- Heat the dark chocolate in short bursts in the microwave until completely melted. Now drizzle over the crushed biscuit layer.
- Allow to cool completely before slicing.
Top Tip: Lightly greasing your knife with vegetable oil will help you slice the brownies as the marshmallow layer can be quite sticky!
