Crookies - Croissant Cookies

A fun take on the TikTok viral Croissant and cookie hybrid! Crispy, soft and chewy, these Crookies – Croissant cookies are to die for!
I have chosen to use an Orange Zest Flavour Shot for my cookie base, plus Velvet Vanilla Natural Flavoured Icing Sugar for my glaze. Other combinations I think would work beautifully are respberry and white chocolate, Pistachio and raspberry, or Caramelised biscuit! There are so many options to choose from.

Ingredients
- 200g Chocolate chips
- 220g plain flour
- 1tsp bicarbonate of soda
- Pinch of salt (if using unsalted butter)
- 120g light soft brown sugar
- 60g caster sugar
- 110g butter
- 1 egg
- 25g Flavour Shot
- 1 can of ready prepared croissant dough
- 200g Natural flavoured icing sugar
- a small amount of warm water for mixing the glaze.
Method
Preheat your oven to 170*c fan
- In the bowl of a stand mixer, place the butter, caster sugar and soft brown sugar.
- Beat until light fluffy before adding the egg and mixing well again.
- Now it’s time to add the flavour shot, salt, bicarb, and half of the flour. mix on a slow speed until just combined.
- Add the remaining flour and mix again until combined.
- Fold in the chocolate chips.
- Spread the cookie dough onto a piece of baking paper in a rectangle slightly wider than the height of the croissant dough can.
- lace a second sheet of paper on top and smooth out before placing the cookie dough in the freezer for roughly 5 minutes.
- Open the can of croissant dough and unroll. cut into two equal rectangles.
- Take the cooke dough from the freezer and remove the top paper. Place one half of the croissant dough on top and stretch to cover the cookie dough.
- Turn over, remove the paper and repeat with the other half of the croissant dough.
- Cut the layered dough across the width into 3cm strips,
- Roll each strip into a spiral disc and place each into a cavity of a cupcake tin.
- Bake for 20-24 minutes, until golden brown.
- Remove from the tin while hot and place on a cooling rack.
- In a bowl, mix the Natural flavoured Icing Sugar with just enough water to form a thick glaze icing, the drizzle over the baked Crookies – Croissant cookies.

Crookies – Croissant cookies can be stored at room temperature for roughly 4 days.
