Ultimate Fudgey Brownies
These Ultimate Fudgey Brownies are a really decadent treat, made with only cocoa powder and other store cupboard staples. The fudge centre comes from the high butter content. If you prefer a ‘cakey’ Brownie, you would need more flour and less butter.
I have added some Coffee Flavour Shot to really boost the chocolate flavour, but you could use any Flavour shot to give your brownies a twist! Think Raspberry Ripple, Salted Caramel, or even Irish cream!
Ingredients
- 220g Butter
- 200g Caster sugar
- 175g Dark brown sugar
- 120g Sugar and Crumbs unflavoured Cocoa powder
- 1/4tsp salt
- 3 eggs
- 100g plain flour
- 25g flavour Shot
Method
Preheat Oven to 160c Fan
- Place the butter, both types of sugar, cocoa powder and salt into a microwave safe bowl.
- Microwave the mixture in short bursts, until the butter is completely melted, stirring between increments.
- Set aside for 5 minutes to cool.
- Once the mixture has cooled, add the eggs one at a time beating in well.
- Add the flour and Flavour Shot and mix well.
- When the flour is well mixed in, continue to beat until the mixture comes away from the sides of the bowl. This is exactly the opposite of making a sponge cake, you need to really mix it!
- Pour the mixture into a lined 8″/11″ tin and bake for 20-30 mins.
- To test if the brownie is ready, insert a wooden cocktail stick. A few moist crumbs should be stuck to the stick.
- Place on a cooling rack to cool slightly before enjoying your Ultimate Fudgey Brownies!
