Gin and Tonic Flavoured Sorbet (Non-Alcoholic)

A refreshing non-alcoholic dessert to serve after a rich and heavy meal. Your dinner party guests will love this as it refreshes the palette and has a fabulous taste of Gin and Tonic, a super treat for the designated driver.

What is Sorbet?

Sorbet also called “water ice”, is a frozen dessert made from sugar-sweetened water with flavouring – typically fruit juice, fruit purée, wine, liqueur or honey. Generally, sorbets do not contain dairy ingredients.

Ingredients

• 400g Sugar and Crumbs Gin and Tonic Natural Flavoured Icing Sugar
• 400ml water
• 400ml Tonic Water
• Zest and juice of 1 Lime
• Zest of 1 Lemon
• Juice of half Lemon
• Fresh lemon and Lime Slices to freeze for decoration
• 1 Egg White

Instructions

1. Put the Natural Flavoured Icing Sugar and 400ml water in a pan and warm on low heat until it has dissolved. Increase the heat and bring to the boil and allow to bubble for 1 minute. Remove from the heat and allow to cool slightly.

2. Pour the Tonic Water into a bowl and then carefully pour over the sugar syrup mixture. Chill in the fridge until cold.

3.  Once the frozen tonic mix is cold, add the zest and juice of the lemon and lime and mix well. Pour into a container and freeze until just frozen, this will take 2 – 2 1/2 hours.

4. Remove the just frozen sorbet from the freezer and break it up with a fork. froth up the egg white with a fork and add both to a large mixing bowl. with a handheld mixer mix both together on short blasts. you will have to work quickly so the sorbet does not begin to melt.

5.  Pour the sorbet back into the freezer container and freeze until solid. Freeze the slices of lemon and lime you have cut on a tray until they are solid.

6.  Serve the sorbet scooped into glasses or small bowls and decorate it with lemon and lime slices.
