Fruit Pizza

Fruit Pizza is a soft chewy cookie base topped with cream cheese frosting and then covered with an array of fruit to finish. It is called a Fruit Pizza due to the shape, and that it’s topped with a ‘sauce’ (frosting) and ‘toppings’ (Fruit).

Ingredients
Dough
- 170g Unsalted Butter Softened
- 100g Sugar and Crumbs Natural Flavoured Icing Sugar – Flavour of your choice
- 100g Granulated Sugar
- 1 Egg plus 1 yolk
- 280g Plain Flour
- 30g Cornflour
- 1 Tsp Bicarbonate of soda
- 1/2 Tsp Salt
Cream Cheese Frosting
- 150g Cream Cheese
- 150g Unsalted Butter Softened
- 300g Sugar and Crumbs Natural Flavoured Icing Sugar – Flavour of your choice
Toppings
- 220g Strawberries
- 50g Blueberries
- 2-3 Kiwis
- 2 Peaches or Nectarines
- 50g Raspberries
- To Glaze 2 Tbsps Honey and a little water
Method
- Start by preheating the oven to 180c and line the base of a 10 -12inch tin with baking paper.
Dough
- Prepare the dough: Add the butter and sugars to the bowl of a stand mixer and beat until light approx 3-5 minutes.
- Add the egg, mix until combined and then add the yolk and mix again.
- Next sieve the flour, salt, bicarbonate of soda and cornflour into the mixing bowl, fold in then beat for a minute to form the dough.
- Place in the tin and spread out evenly, using the back of a tablespoon or palette knife will help.
- Bake in the oven for 15-20 mins until golden. It will rise then fall. Leave to cool completely.
Frosting
- Add the butter to a clean mixing bowl and beat for a minute, next add the cream cheese and beat in then add the icing sugar and beat until creamy and smooth.
- Spread the frosting over the cooled cookie and smooth out neatly.
Toppings and assembly
- Chop the fruit depending on how you would like to dress the ‘pizza’. I’ve started with the strawberries so slice these from root to tip thinly, the kiwis round circles, the peaches/nectarines in rounds.
- Lay them out on the pizza in your chosen design.
- Lastly, to give the fruit a glossy finish, mix the honey with a little water (about 1 Tbsp)and use a pastry brush to glaze. This stops the fruit drying out and makes it look appetising.
The Fruit Pizza needs to be kept in the fridge and eat within 1-2 days for freshness.
