What is Cookie Cake?
Cookie Cake is made from a cookie dough recipe that gives you a Moist Cookie texture Cake. Great for a party piece.
In addition, you can also use any flavour from our amazing range of Natural Flavoured Icing Sugars and Cocoa Powders!
Ingredients
- 200g Butter Unsalted – Softened
- 125g Sugar and Crumbs Natural Flavoured Icing Sugar of choice
- 125g Light Brown Sugar
- 320g Plain Flour
- 1/2 tsp Bicarbonate of Soda
- 120g Chocolate Callets or Chips
- 30g Sprinkles
For the Decoration
- 75g Butter unsalted softened
- 150g Sugar and Crumbs Natural Flavour Icing Sugar ( Flavour of your Choice)
- Sprinkles
Instructions
1. Preheat the oven to 160 C, Gas 3. Have an 8-inch circle tin ready to hand.
2. Cream together the butter and sugars until combined.
3. Add the egg and beat in.
4. Add the flour and bicarbonate and fold in or mix gently until just combined.
5. Next add the chocolate chips and fold in, transfer to the tin and smooth the top evenly. Add more chocolate chips and sprinkles arranged on the top.
6. Bake in the oven for 30-35 mins until golden in colour. Leave to cool fully before decorating. The cookie will collapse a little in the middle on cooling.
7. Make the buttercream by beating the butter until smooth and then add the icing sugar, chop in and beat until smooth.
8. Transfer to a piping bag fitted with your desired nozzle ( I used a 1M) and then pipe swirls around the edge of the cake and add sprinkles.
Keep in a covered container, will keep well for 5 days.
